Fennel is the carrot's cousin. It's a dried herb you can expect to find in tea, salads, a type of Italian salami and in Fenouillet, a French wine. It has a flavour reminiscent of liquorice and an aroma that's both sweet and spicy.
Fennel is not a regular herb, it's a cool herb from which fennel seeds are taken. Variant essential oils are extracted from the seeds using steam distillation and used for their individual properties, such as anti-inflammatory, antiseptic, microbial and antioxidant. The seeds can be ground and used in masks to provide mild cleansing and toning. They also help with cleansing oily and congested skin while tightening pores and brightening the skin. In aromatherapy, fennel is used to relax the body and calm the mind.
In scientific/ingredient list terms, fennel is sometimes referred to as Foeniculum vulgare.
